New York City could soon force pizzerias to pay thousands of dollars in renovations to protect their coal and wood ovens from environmental air quality problems, according to a report.
The New York City Department of Environmental Protection (DEP) has issued new rules requiring pizzerias with coal and wood ovens installed before 2016 to reduce carbon emissions by 75%, according to the New York Post. Restorers would be forced to install a filter in the specified furnaces and then hire a technician to regularly inspect the carbon emissions.

“All New Yorkers deserve to breathe healthy air, and wood and coal stoves are among the top contributors of harmful pollutants in neighborhoods with poor air quality,” said DEP spokesman Ted Timbers. “This common sense rule, developed with restaurant and environmental justice groups, requires a professional assessment of whether installing emissions controls is feasible.”
A pizzeria owner told The Post that he had already spent $20,000 on emission-reducing air filter devices in anticipation of the DEP rule due to installation and regular maintenance.
“Oh yes, it’s a big expense!” said Paul Giannone. “It’s not just the cost of getting it installed, it’s the maintenance. I have to pay somebody to do it, to go there every few weeks and hose it down and you know, do the maintenance. doing.”

Fewer than 100 restaurants would be affected by the regulations, The Post reported, citing a city official.
Another pizzeria owner anonymously told The Post that negotiations are underway with the city council over whether the regulations should apply to all coal and wood ovens or just those installed after the ordinance goes into effect.

“This is an unfunded mandate and it’s going to cost us a fortune, not to mention ruin the taste of the pizza and completely destroy the product,” said the pizzeria’s owner. “If you mess with the temperature in the oven, you change the taste. That pipe, that chimney, it’s so big to create the perfect updraft, keeps the temperature perfect, it’s both an art and a science. You take away the char, the thing that makes the pizza taste great, you kill it.
